NEW! Hog Wild Pork Rub -Pork has been a favorite meat in the German community since the original group of settlers came to Fredericksburg with John O. Muesebach.  The settlers prepared pork in a variety of ways including sausage, pork steaks and Jaegerschnitzel, a sort of “chicken-fried pork steak’ with cheese and mushroom sauce.  Fredericksburg Farms Hog Wild Pork Rub combines a variety of spices with garlic, chili pepper and lemon peel to let you recreate the recipes of the original settlers or create you own new classics.

NEW! Grilled Tuna Rub - Deep-sea fishing is one of the top recreational sports along the Gulf Coast of Texas. Just imagine heading out to the blue water break and hooking a big yellowtail and bringing it in! Even if you are not an angler, grilled tuna steaks are hard to beat for flavor. There is an art to cooking good tuna, however. First, you need a great rub. Fredericksburg Farms Grilled Tuna Rub combines the tastes of onion, garlic, lemon peel, a touch of sugar and other spices to help bring out all of the flavors of that big, juicy, red tuna steak seared over a nice hot fire.

NEW! Chisholm Trail Beef Rub - The Texas cowboy of yesteryear rode long, hot, dusty hours on the trail when moving herds of cattle up the Chisholm Trail to market.  When the day was finally done, they had a mighty hunger for some filling grub, but usually had to settle for beans, bread and, perhaps, a small critter such as a rabbit.  To make this trail food more palatable, cowboys carried small tins of their favorite seasoning to give their food a little more flavor.  In the spirit of the Old West, Fredericksburg Farms Chisholm Trail Beef Rub uses brown sugar, onion, garlic, red pepper, chili pepper and other spices to create the modern-day version of the old cowboy “trail rubs.”  Add this rub to your brisket, roast, hamburger patties or any cut of beef to get a flavor of the Old West.

NEW! Hen Scratch Poultry Rub - Pioneer settlers in the Texas Hill Country considered two things to be top priority when setting up a homestead.  First, you needed a good milk cow to provide milk and butter for the family.  Second, you needed a good flock of chickens.  The purpose of the chickens were two-fold.  First, they provided meat and, second, on a daily basis they provided eggs for eating and baking.  Well, that tradition is still alive and well in Fredericksburg today.  Even in the middle of town, you’ll see homes that have a flock of chickens in the side yard!  Nothing beats the taste of fresh “yard” eggs.  And, nothing beats the taste of a young bird grilled over an open fire or oven-roasted to perfection.  Fredericksburg Farms Hen Scratch Poultry Rub enhances the flavor of chicken, dove, quail or turkey with a combination of paprika, onion, garlic, lemon peel, a hint of brown sugar and red pepper.
NEW! Texas Wild Game Rub -Hunting was a necessary thing for the early Hill Country settlers.  Game meats added meat to the family’s larder, and game was abundant.  Even today, many families count on game meats as part of their diets and hundreds of hunters stock up their freezers each year during hunting season.  The wonderful, earthy taste of wild game can now be enhanced with Fredericksburg Farms Texas Wild Game Rub.  Our unique blend of peppers, spices and a touch of sugar will bring out the best flavor of whatever game meat you are cooking.
NEW! NEW! Java Steak Rub -Coffee was a dietary mainstay for the Texas cowboy.  Whether herding cattle up the trail to market, or working on a large ranch, the cowboy would often spend long hours in the saddle alone.  At the beginning and end of each day, a good cup of java was mighty welcome.  A few years back some of our innovative Texas chefs began experimenting with making coffee-flavored rubs to use on their grilled steaks.  The results were met with great public acceptance.  We think you’ll love our Fredericksburg Farms Java Steak Rub.  It just seems to bring out the “beefiness” in those big, thick rib eyes and t-bones!

Victory Garden Vegetable Dip - In 1941 through 1945 the world was at war. Resources of all kinds were being diverted to support national war efforts. The American government asked all citizens to help in every way that they could. Citizens responded by purchasing war bonds, conserving raw materials, recycling, rallying behind the troops, helping their neighbors and planting “Gardens for Victory”.
